ROTTERDAM, 17 January 2025 – The Netherlands’ culinary competition scene witnessed a new highlight as Ter Marsch & Co secured a win at the National Loaded Fries Championship with their Bali Spice Fries creation.

Ter Marsch & Co, a popular restaurant group with locations in Rotterdam and Amsterdam, claimed victory at the National Loaded Fries Championship (NK Loaded Fries) held on 16 January 2025 during Horecava, an annual hospitality industry event. The winning dish, Bali Spice Fries, was presented by Andy Hoogvliets and impressed the jury with its creative use of Indonesian flavours.

The Bali Spice Fries featured freshly fried Agria potatoes with skin, topped with tender babi ketjap (Indonesian soy-braised pork) infused with spices such as ginger, star anise, and lemongrass. The dish was further complemented with pickled mini cucumbers, green beans, Bali-style ketchup sauce made with mackerel, chilli peppers, and fish sauce, and a smooth pepesan mayonnaise. A finishing touch of puffed rice added a satisfying crunch.

 

Jury praises Indonesian-inspired loaded fries

The jury, including notable food industry expert Eke Bosman from Snackspert, praised the dish for its unique presentation and rich flavours. “Each bite offers a remarkable taste experience,” remarked the judges, noting the skilful blend of sweet, savoury, and tangy elements. The dish was specially crafted for the competition and drew inspiration from Indonesia’s vibrant culinary traditions.

Loaded fries, a growing trend in contemporary cuisine, are versatile dishes with toppings that elevate standard fries to a full-fledged meal. The Bali Spice Fries succeeded in introducing a modern take on this trend by incorporating authentic Indonesian ingredients and techniques.
